Untuk memasak Lodeh Sayur kita harus mempersiapkan bahan berikut:
- 250 grm nangka muda, potong2, rebus setengah empuk, tiriskan.
- 2 buah wortel, potong2.
- 1 buah labu siam, potong2.
- 1 butir kelapa, jadikan 250 ml santan kental, 1000 ml encer.
- 3 sdm minyak goreng, utk menumis.
- 150 ml air.
- Bahan pelengkap :.
- 5 lembar daun salam.
- 1 jempol lengkuas, memarkan.
- 2 batang serei, memarkan.
- 1 sdm garam.
- 1 sdt kaldu bubuk rasa ayam.
- 2 sdm gula merah.
- 1 sdt gula pasir.
- Bumbu halus :.
- 11 siung bawang merah.
- 7 siung bawang putih.
- 5 butir kemiri, sangrai.
- 1 sdm ketumbar, sangrai.
- 1/4 jempol kunyit.
- 2 jempol kencur.
- 5 cabe merah.
- 1 sdm ebi.
This Sayur Lodeh is one of them and very popular in Java region. It is usually made from different kind of vegetables like eggplant, young jackfruit (nangka muda), Gnetum gnemon (melinjo), chayote (labu siam), long beans (kacang panjang), carrots, etc. Sayur lodeh can be served with steamed rice (separated or mixed in one plate), or with sliced lontong rice cake. Although sayur lodeh basically is a vegetarian dish, it is popularly consumed with ikan asin (salted fish), opor ayam, empal gepuk or beef serundeng.
Cara membuat Lodeh Sayur
:
- Panaskan minyak, tumis bumbu halus bersama daun salam, lengkuas dan serei sampai bumbu wangi dan tdk berbau langu, beri air, masukkan sayuran, aduk rata.
- Lalu tuang santan encer, tambahkan garam, kaldu bubuk, gula merah dan gula pasir, masak sampai mendidih dan sayuran empuk, sesekali di aduk.
- Terakhir tuang santan kental, masak lagi sampai mendidih, koreksi rasa, angkat dan sajikan.
